Today, we introduce you “harmonica,” but it’s not about a musical instrument. It’s food! Actually, base of swordfish’s back fin is called harmonica.
There are various theories why it’s called that way. One says it’s because the part of the fish resembles to the instrument. Other theory tells that a person eating the food looks as if he or she plays a harmonica.

North Miyagi’s Kesennuma has the largest catch of swordfish in Japan. “Harmonica” is popular in the port town and you can taste it at diners, bars, and in some other places.
At a fish market in Kesennuma, harmonica is sold in small amounts so that people can cook easily at home.
Its fish meat between bones is chewy, fatty and delicious! It is said it’s good for health and beauty.
Sweet and pungent boiled harmonica goes well with both rice and sake.

Swordfish landed on Kesennuma put on fat and are in season during December to February. So now is the best time to eat it!!!
Most of harmonica is consumed only in Kesennuma, because of their low trading volume. It’s hard for people outside the town to find the delicacy.
Therefore, it’s good idea to come to Kesennuma and taste it!
